Fluffy, evenly cooked tamagoyaki at home

Kobo Aizawa pure copper tamagoyaki pans, 9 cm and 12 cm

Ever wondered why your Japanese rolled omelette never comes out as soft and fluffy as in a restaurant? The secret is the pan. Pure copper conducts heat extremely well and spreads it evenly, so the egg cooks without hot spots into a smooth, fluffy tamagoyaki. It warms up quickly even on low heat, so the egg proteins set gently instead of turning tough, keeping a soft, mild flavor.

Professional 1.5 mm copper, tin-lined

Among Japanese restaurant chefs it is common knowledge that the thickness of the metal changes the result. This pan uses 1.5 mm copper, the thickness professionals use, which holds heat and passes it to the egg softly. The inside is lined with pure tin, which prevents a coppery smell, rust and verdigris, and keeps the pan’s beautiful shine for longer.

Timeless, and useful every day

The simple rectangular shape has crisp corners, so the omelette comes out neatly shaped. The 9 cm pan is just right for 1–2 eggs and the 12 cm pan for 3–4. Use it as a small everyday pan, too: for a little deep-frying, a quick vegetable stir-fry or mini pancakes. Sturdy enough to last for years, it makes a lovely wedding or housewarming gift.

The wooden handle comes unattached, with one screw. Insert the handle, mark the hole, pull it out and make a pilot hole with an awl, then drive the screw in fully.

About Kobo Aizawa

Kobo Aizawa is a long-established kitchen tool maker in Tsubame, Niigata, a town famous for metalwork. Their aim is to make tools that bring Japan’s traditional crafts into everyday life. They always return to the basic questions of why an object exists and why it is needed, pursuing functional beauty and stripping away decoration to give their tools life. Material, ease of use and how a tool feels in the hand come before fashionable design, which is why their tools are so sturdy and pleasant to use.

Care

  • The copper has no anti-oxidation coating, so the surface may already show some natural oxidation on arrival. This does not affect use; enjoy it as part of the character.
  • Wash well with dish detergent before first use.
  • Heat the pan with plenty of oil before cooking. Copper conducts heat so well that low to medium heat is enough.
  • When the pan is new, a little tin may collect in the corners; remove it with a toothpick or chopstick. It is tin, not lead, and is harmless.
  • Do not leave the pan dirty after use, as this can cause blue-green copper compounds (verdigris). Remove dirt, leave a thin film of oil, dry well and store in a dry place.
